Location of production -  HAUTES COTES DE BEAUNE. Burgundy, France. 
Visual - Garnet in colour with hints of bright red. 
Nose - aromas of blackcurrant and heady notes of rose, cherry, strawberry, and licorice, with touches of blueberry, iris, violet, pepper and mint,
Taste - Dry, Medium-bodied, fresh and fairly structured, marked by a minerality giving rise to crisp tannins and fruitiness, followed by a saline finish, underscored by aromas of cherry and licorice.
Vinification The harvest is manual with sorting in the vineyard. Transport is carried out by lifting bins to the vat room.The grapes are destemmed and transferred using a belt into open vats, where alcoholic fermentation takes place under the action of native yeasts, for a period of 10 to 20 days with punching down and pumping over. At the end of the alcoholic fermentation, the vat is devatted by hand in the press. A light pressing that respects the harvest is carried out. After static settling for 24 to 48 hours, the wines are aged in oak barrels where malolactic fermentation takes place. The barrels are generally medium toasted, with a percentage of new barrels varying between 10 and 30% depending on the appellation.The aged period varies from 9 to 12 months depending on the appellation.
Serving temperature: 14-16°C.
